Ingredients
- 3.5 oz all-purpose flour (3.2 oz for dough, 0.35 oz for dusting)
- 3.2 oz cold butter, cubed
- 1 fl oz cold water
- 0.4 oz granulated sugar
- 1 pinch salt
- 1 large pear, peeled and thinly sliced
- 0.2 oz cornstarch
- 1 oz brown sugar
- Honey, for garnish
- Toasted walnuts, chopped, for garnish
Instructions
In a bowl, combine 3.2 oz of flour, granulated sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Add the cold water and mix briefly until a dough forms. Do not overwork. Wrap the dough in plastic film and refrigerate for one hour.
In a separate bowl, toss the sliced pears with cornstarch and brown sugar.
On a surface dusted with the remaining 0.35 oz of flour, roll the chilled dough into an 8-inch disk.
Arrange the pear mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough up and over the filling.
Bake at 320°F for 45 minutes, or until the crust is golden brown.
Allow to cool slightly. Garnish with honey and chopped toasted walnuts before serving.
