Lemon Ricotta Carnival Fritters
A sweet Italian tradition. These 'Castagnole' are made with creamy ricotta for a cloud-like texture, scented with citrus zest and tossed in sugar while still warm.
Ingredients
- 7 oz all-purpose flour
- 5.3 oz ricotta cheese
- 1 large egg
- 1.8 oz granulated sugar, plus additional for coating
- 2 tsp baking powder
- Zest of 1 lemon or orange
- Cooking oil spray, as needed
- Milk, as needed
Instructions
In a bowl, combine the ricotta cheese, egg, sugar, and citrus zest. Mix until well incorporated.
Add the flour and baking powder. Knead until a smooth dough forms. If the dough is too stiff, add up to 1 tablespoon of milk.
Shape the dough into small balls, approximately 1.5 inches in diameter. Lightly coat each ball with cooking oil spray.
Cook at 355°F for 10 minutes. Immediately remove the fritters and, while still hot, roll them in granulated sugar until fully coated.
