Ingredients
- 4 medium potatoes, uniform in size
- 0.5 fl oz olive oil
- 1.76 oz butter, melted
- 0.07 oz garlic powder
- Fresh parsley, chopped
- Salt
- Pepper
Instructions
Wash and scrub the potatoes, leaving the skin on. Place each potato on a cutting board and make parallel, 1/4-inch incisions, stopping before cutting completely through the base.
Coat the potatoes with olive oil. Season generously with salt and pepper, ensuring seasoning enters the incisions.
Arrange the potatoes in the cooking basket. Cook at 350°F for 30 minutes.
While the potatoes are cooking, combine the melted butter, garlic powder, and chopped parsley in a small bowl.
After 30 minutes, remove the basket. Brush the potatoes with the garlic butter mixture, ensuring it coats the inside of the slits. Return to cook for an additional 10 minutes.

"To prevent cutting completely through the potato, place a chopstick or wooden spoon handle on each side of the potato to act as a guide for the knife."
