Greek-Style Feta & Oregano Fries
A Mediterranean twist on a favorite. Crispy fries are tossed with salty crumbled feta, fresh parsley, and aromatic oregano for a bold and savory side dish.
Ingredients
- 2 large yellow potatoes
- 1 quart cold water, for soaking
- 3 tbsp extra virgin olive oil or vegetable oil
- 1 tsp garlic powder
- 1 tsp sweet paprika
- 2.1 oz feta cheese, crumbled
- Fresh parsley and oregano, chopped, to taste
- Salt and black pepper, to taste
- Lemon wedges, for serving
Instructions
Cut potatoes into uniform sticks. Soak in a bowl of cold water for 15 minutes to remove excess starch.
Drain the potatoes, rinse under running water, and dry thoroughly with paper towels.
In a large bowl, combine dried potatoes with oil, garlic powder, paprika, salt, and pepper. Mix until evenly coated.
Preheat the appliance to 383°F. Place potatoes in the basket and cook for 25-28 minutes. Shake the basket every 10 minutes to ensure even cooking.
Transfer cooked potatoes to a serving bowl. Immediately garnish with crumbled feta, fresh parsley, and oregano.
Serve immediately with lemon wedges.
