Gratinated Sweet Peppers with Capers
A rustic Mediterranean treat. Sliced bell peppers are roasted until sweet and topped with a savory, crunchy breadcrumb and caper crust for a burst of flavor.
Ingredients
- 2 large fleshy bell peppers (red or yellow)
- 2.8 oz coarse breadcrumbs
- 0.7 oz desalted and minced capers
- 1 garlic clove, minced
- 2 tbsp olive oil
- Fresh parsley, salt, and pepper
Instructions
Wash bell peppers, remove stem, seeds, and internal membranes. Cut into wide strips.
Combine breadcrumbs, capers, minced garlic, parsley, salt, pepper, and half of the olive oil in a small bowl to form the breadcrumb mixture.
Arrange pepper strips in the cooking basket, concave side facing upward.
Fill each strip with the prepared breadcrumb mixture. Drizzle remaining olive oil over the filled strips.
Cook at 365°F for 14 minutes, or until peppers are softened and breadcrumbs are golden brown.
