The ultimate cheesy indulgence. These double-breaded mozzarella pieces are cooked until the exterior is a deep golden-brown, hiding a gooey, molten cheese center that’s ready for dipping.
Ingredients
- 8 mozzarella sticks
- 0.88 oz all-purpose flour
- 0.14 oz cornstarch
- 0.14 oz salt
- 0.04 oz black pepper
- 3 eggs, beaten
- 0.68 fl oz milk
- 2.47 oz breadcrumbs
- Dried parsley
- Non-stick cooking spray
Instructions
Cut each mozzarella stick into uniform pieces.
Prepare three shallow dishes. In the first, combine flour, cornstarch, salt, and pepper. In the second, whisk together eggs and milk. In the third, combine breadcrumbs and dried parsley.
Dredge each mozzarella piece in the flour mixture, dip it into the egg mixture, then coat with the breadcrumb mixture. Repeat the egg and breadcrumb steps for a thicker crust.
Place the breaded pieces on a tray and freeze for at least 15 minutes.
Arrange the frozen pieces in a single layer in the basket. Spray generously with non-stick cooking spray. Cook at 350°F for 8 minutes, turning them halfway through the cooking time.

"Freezing the breaded pieces prevents the cheese from leaking during cooking. Turn the pieces halfway through to ensure even browning."
