Golden 'Blooming' Onion
An iconic American steakhouse appetizer. This whole onion is carved into petals, lightly battered, and cooked until it 'blooms' into a spectacular, crispy pull-apart snack.
Ingredients
- 2 large yellow onions
- 4.6 oz all-purpose flour
- 0.25 oz sweet paprika
- 0.35 oz salt
- 0.25 oz garlic powder
- Pinch of chili flakes
- Pinch of dried oregano
- 10 fl oz water
- 2.1 oz breadcrumbs
- Cooking oil spray, as needed
Instructions
Peel the onions and cut off the top. Make eight deep, evenly spaced downward cuts starting from the center, without cutting through the base.
Submerge the onions in ice-cold water for a minimum of 2 hours to allow the petals to separate.
In a separate bowl, combine the all-purpose flour, sweet paprika, salt, garlic powder, chili flakes, and dried oregano. Gradually whisk in the water until a smooth batter forms.
Remove the onions from the water and drain thoroughly. Dip each onion into the batter, ensuring all petals are coated inside and out. Sprinkle breadcrumbs evenly over the entire surface, including between the petals.
Lightly spray the battered onion with cooking oil. Place it in the air fryer basket. Cook at 400°F for 10 minutes. Reduce temperature to 350°F and cook for an additional 15 minutes, or until golden brown and cooked through.

"Adhere to the minimum 2-hour soaking time in ice water. This step is crucial for the onion petals to open correctly."
