Crispy Onion Rings
A classic appetizer featuring onion rings with a seasoned, crisp coating, prepared with a reduced-oil cooking method.
Ingredients
- 1 sweet white onion, cut into 0.5-inch thick rings
- 3.2 oz coarse breadcrumbs
- 7.4 fl oz buttermilk
- 2.1 oz all-purpose flour
- 2 large eggs
- 0.07 oz smoked paprika
- 0.18 oz salt
Instructions
Slice the onion into 0.5-inch thick rounds. Separate the layers to form individual rings.
Prepare three shallow dishes. Place flour in the first. Whisk eggs and buttermilk together in the second. Combine breadcrumbs, salt, and paprika in the third.
Coat each onion ring first in flour, shaking off any excess. Dip it into the egg and buttermilk mixture, allowing excess to drip off. Press the ring firmly into the breadcrumb mixture to ensure a complete coating.
Arrange the coated rings in a single layer in the cooking basket. Work in batches if necessary to avoid overcrowding. Spray the rings with cooking oil.
Cook at 375°F for 10 minutes per batch, or until golden brown and crisp.

"For a more adherent coating, place the breaded rings in the freezer for 5 minutes before cooking. This helps set the breading."
