The taste of summer on toast. Sourdough bread is toasted to perfection and topped with a vibrant mixture of sun-ripened tomatoes, fresh basil, and extra virgin olive oil.
Ingredients
- 4 thick slices country-style bread
- 10.5 oz vine-ripened tomatoes
- 1 garlic clove
- Fresh basil, to taste
- Extra virgin olive oil
- Salt, to taste
Instructions
Finely dice the tomatoes. In a bowl, combine with olive oil, salt, and torn basil leaves. Set aside to marinate.
Toast the bread slices at 400°F for 4-5 minutes until crisp.
Once toasted, lightly rub the surface of each warm bread slice with a raw garlic clove.
Top each slice with the tomato mixture. Serve immediately.
