The perfect gourmet garnish. These red onions are caramelized into a thick, glossy, balsamic-style glaze—ideal for topping grilled meats or aged cheeses.
Ingredients
- 3 medium red onions (Tropea style)
- 0.7 fl oz olive oil
- 0.5 fl oz balsamic vinegar
- 0.35 oz brown sugar
- A pinch of salt and pepper
Instructions
Peel and cut red onions into thick wedges or large rings.
Combine onion pieces with olive oil, balsamic vinegar, brown sugar, salt, and pepper in a bowl.
Mix thoroughly to dissolve sugar and ensure even coating.
Transfer mixture to a preheated cooking appliance basket set to 340°F.
Cook for 16 minutes, stirring every 5-6 minutes to ensure even caramelization and prevent scorching.
