Indulgent and aromatic. Delicate cod fillets are seasoned with vibrant curry paste and served with a silky coconut cream sauce for a restaurant-quality meal.
Ingredients
- 17.6 oz cod fillet
- 3 tbsp mild Indian curry paste
- 0.5 oz shredded coconut
- 6.8 fl oz coconut cream
- Salt to taste
- Black pepper to taste
Instructions
Coat the cod fillets evenly with 2 tablespoons of curry paste.
In a small saucepan, combine the remaining tablespoon of curry paste with the coconut cream. Heat gently and season with salt and pepper.
Place a sheet of parchment paper on a baking tray and arrange the cod fillets on top.
Bake at 400°F for 10 minutes, or until the fish is cooked through.
Serve the cod hot, garnished with the warm coconut sauce and shredded coconut.
