Named for the 'telephone wire' of mozzarella that stretches when you pull them apart. These Roman rice croquettes are a savory, cheesy staple of the Eternal City.
Ingredients
- 1.5 cups (8.8 oz) chilled cooked rice with tomato sauce or ragù
- 1 large egg, beaten
- 3.5 oz low-moisture mozzarella, cut into strips
- Breadcrumbs, for coating
- Olive oil spray
Instructions
Portion approximately two tablespoons of chilled rice. Flatten the portion in your palm and place mozzarella strips in the center.
Enclose the mozzarella with the rice, forming an oval shape.
Coat each supplì first in the beaten egg, then in breadcrumbs, ensuring complete coverage.
Spray the supplì with olive oil. Cook at 400°F (200°C) for 12 minutes, turning them over at the halfway point.
