Ingredients
- 1.1 lbs (500g) cold mashed potatoes (from starchy potatoes)
- 1 large egg
- 1.8 oz (50g) grated Parmesan cheese
- 4 oz (115g) mozzarella cheese, well-drained and cubed
- 1 large egg, beaten, for coating
- Breadcrumbs, for coating
- Cooking spray
- Salt and black pepper to taste
Instructions
In a large bowl, combine cold mashed potatoes, 1 large egg, and Parmesan cheese. Season with salt and pepper. Mix until fully incorporated.
Take a portion of the potato mixture and shape it into a cylinder. Insert a cube of mozzarella into the center and seal completely.
Coat each croquette first in the beaten egg, then roll it in breadcrumbs, ensuring complete coverage.
Refrigerate the coated croquettes for a minimum of 15 minutes to firm them.
Preheat oven to 400°F (200°C). Arrange croquettes on a baking sheet lined with parchment paper, ensuring they do not touch.
Lightly spray the croquettes with cooking spray. Bake for 12-14 minutes, turning them halfway through the cooking time, until golden brown and crisp.
