Ingredients
- 16 oz pork tenderloin, pounded thin
- 8 slices prosciutto
- 7 oz fresh spinach
- 4 slices firm mozzarella
- 0.7 oz sun-dried tomatoes
- 1 tbsp olive oil
Instructions
Pound the pork tenderloin portions to an even thickness.
Arrange the prosciutto slices in an overlapping layer on a work surface. Place the pounded pork tenderloin over the prosciutto.
Layer the spinach, mozzarella, and sun-dried tomatoes down the center of the pork.
Roll the pork and prosciutto tightly into a cylinder. Secure with kitchen twine if needed.
Brush the roll with olive oil. Cook at 400°F for 10 minutes, or until the prosciutto is crisp and the pork is cooked through.
