The perfect veggie alternative. These zucchini batons are coated in a savory Parmesan and breadcrumb crust, offering a light yet crispy bite with a tender heart.
Ingredients
- 2 medium zucchini, cut into sticks
- 1.75 oz all-purpose flour
- 2 large eggs, beaten
- 2 tbsp milk
- 3.5 oz breadcrumbs
- 1.4 oz grated Parmesan cheese
- Salt and black pepper, to taste
- Non-stick cooking spray
Instructions
Cut zucchini into sticks. Remove the core if it contains excess seeds or moisture.
Set up a three-stage breading station. In the first bowl, combine flour, salt, and pepper. In the second, whisk together eggs and milk. In the third, mix breadcrumbs and Parmesan cheese.
Dredge each zucchini stick in the flour mixture, shaking off any excess. Dip it into the egg wash, allowing excess to drip off. Finally, press firmly into the breadcrumb and Parmesan mixture to ensure a complete coating.
Preheat the cooking appliance to 375°F (190°C).
Arrange the coated zucchini sticks in a single layer on a cooking rack or perforated tray. Spray generously with non-stick cooking spray.
Cook for 10-12 minutes. Halfway through the cooking time, gently turn the sticks and spray the other side with cooking spray to ensure even crisping.
