Crispy Panko-Crusted Cod
Elevate your weeknight dinner with these golden cod fillets. A zesty lemon-herb panko crust provides a satisfyingly loud crunch while keeping the delicate white fish beneath perfectly flaky and moist.
Ingredients
- 4 cod fillets (4.6 oz each)
- 3 oz Panko breadcrumbs
- 1.8 oz melted butter
- 2 tbsp finely chopped fresh parsley
- 1 lemon, zest and juice
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
Season both sides of each cod fillet with salt.
In a bowl, combine the Panko breadcrumbs, melted butter, parsley, lemon zest, lemon juice, and pepper. Mix until well combined.
Distribute the mixture evenly over the top of each fillet, pressing lightly to adhere.
Place the fillets in the cooking basket with the breaded side facing up.
Cook at 340°F for 10 minutes, or until the crust is golden brown.
