Soy-Miso Glazed Japanese Meatballs
Bite-sized umami bombs. Seasoned with miso and finished with a sweet and savory soy-mirin glaze, these meatballs caramelize beautifully for a glossy, addictive finish.
Ingredients
- 16 oz ground beef
- 0.7 oz dark miso paste
- 1 tbsp toasted sesame oil
- 1 tbsp finely chopped mint
- 1.7 fl oz soy sauce
- 1.7 fl oz mirin
- 0.18 oz brown sugar
Instructions
In a large bowl, combine the ground beef, miso paste, sesame oil, and chopped mint.
With oiled hands, form the mixture into uniform meatballs. Refrigerate for 15 minutes to firm.
In a separate bowl, whisk together the brown sugar, soy sauce, and mirin to create the glaze.
Arrange the chilled meatballs in the cooking basket.
Cook at 390°F for 11 minutes, basting the meatballs with the glaze every 2-3 minutes until fully cooked and caramelized.
Chef's Tip
"For an even glaze, brush the meatballs every 2 minutes. Shake the basket or turn the meatballs halfway through the cooking time to ensure uniform cooking."
