A Neapolitan street food classic. Thick slices of bread encase a heart of stringy mozzarella, resulting in a crispy, golden exterior and a luxuriously melted center—all with a fraction of the oil.
Ingredients
- 4 slices Pullman loaf
- 5.3 oz fresh mozzarella
- 2 large eggs
- Breadcrumbs, as needed
- Milk, as needed
- Salt
- Cooking oil spray
Instructions
Remove crusts from the bread slices. Place a thick slice of mozzarella between two bread slices and press the edges firmly to seal.
Briefly dip the sealed edges of the sandwich in milk. Submerge the entire sandwich in beaten egg, then coat thoroughly with breadcrumbs.
Apply an even coat of cooking oil spray to both sides of the sandwich.
Cook at 375°F for 10 minutes. Turn the sandwich over at the 5-minute mark to ensure even browning.

"For enhanced flavor, add an anchovy fillet or a slice of cooked ham with the mozzarella."
