Creamy Baked Eggs with Bacon & Spinach
A sophisticated one-dish breakfast. Eggs are baked in individual ramekins with smoky bacon, fresh spinach, and a decadent Parmesan cream sauce for a high-protein, low-carb start to your day.
Ingredients
- 4 large eggs
- 8 slices smoked bacon, diced
- 2.8 oz spinach
- 5.4 fl oz heavy cream
- 0.7 oz grated Parmesan cheese
- Non-stick cooking spray
- Salt and freshly ground black pepper, to taste
Instructions
Sauté diced bacon in a skillet for 5 minutes. Add spinach and cook until wilted, approximately 2 minutes.
In a small bowl, whisk together heavy cream and grated Parmesan cheese.
Coat four 3-inch heat-resistant ramekins with non-stick cooking spray. Divide the bacon and spinach mixture evenly among the ramekins.
Crack one egg into each ramekin. Pour the cream and cheese mixture over each egg.
Place the ramekins in the cooking basket. Cook at 350°F for 4-6 minutes, or until the egg whites are set.
