Ingredients
- 4.2 oz all-purpose flour
- 2.1 oz unsweetened cocoa powder
- 5.3 oz brown sugar
- 0.1 oz baking powder
- 0.1 oz baking soda
- 0.1 oz instant espresso powder
- 1 pinch of salt
- 5.7 fl oz milk
- 1 large egg
- 2.7 fl oz vegetable oil
- 0.2 fl oz apple cider vinegar
- 1 tsp vanilla extract
Instructions
In a large bowl, whisk together the sifted flour, cocoa powder, brown sugar, baking powder, baking soda, instant espresso powder, and salt.
In a separate container, combine the egg, milk, oil, apple cider vinegar, and vanilla extract.
Pour the wet ingredients into the dry ingredients. Mix with a spatula until just combined. Do not overmix.
Portion the batter into muffin liners, filling each two-thirds full.
Cook at 300°F for 15 minutes, or until a skewer inserted into the center comes out clean.
