Ingredients
- 4 thick cod fillets
- 6 tbsp all-purpose flour
- 5 tbsp coarse breadcrumbs
- 2 large eggs, beaten
- 2.1 oz butter, cut into small pieces
- 1 cup mayonnaise
- 1 tbsp fresh tarragon, minced
- 1 tsp lemon juice
- Freshly ground black pepper
Instructions
Cut cod fillets into uniform 1.5-inch cubes. Pat dry with a paper towel and season with freshly ground black pepper.
In a small bowl, combine mayonnaise, minced tarragon, and lemon juice. Mix until smooth and set aside.
Prepare a breading station with three shallow dishes. Place flour in the first, beaten eggs in the second, and breadcrumbs in the third.
Dredge each cod cube first in flour, then dip in the egg mixture, ensuring it is fully coated. Finally, press into the breadcrumbs to adhere.
Arrange the breaded cod pieces in a single layer in the basket. Place a small piece of butter on top of each cube.
Cook at 355°F for 12 minutes, or until golden brown and cooked through. Serve immediately with the prepared tarragon sauce.
