Bring Italian street food home. High-temperature cooking mimics a charcoal grill, rendering the fat to create tender, slightly charred lamb skewers that are authentically juicy.
Ingredients
- 15-20 fresh or thawed lamb skewers (arrosticini)
- Fine salt
Instructions
If skewers are too long for the cooking basket, break or cut the wooden ends.
Arrange skewers in the basket in a maximum of two crossed layers.
Cook at 400°F for 8-10 minutes.
Flip skewers halfway through cooking.
Remove skewers, place in aluminum foil, and season with salt. Seal the foil and rest for one minute before serving.
