The secret to the juiciest chicken. A yogurt-based marinade tenderizes the meat from within, while fresh rosemary adds a sophisticated, piney aroma during roasting.
Ingredients
- 4 large Chicken Thighs or Drumsticks, skin optional
- 5.3 oz Plain Greek Yogurt, unsweetened
- 1 tbsp Dijon Mustard
- 1 sprig Fresh Rosemary, needles finely chopped
- 2 Garlic Cloves, crushed
- Salt and Black Pepper, to taste
- 1 tbsp Olive Oil
Instructions
In a large bowl, combine the Greek yogurt, olive oil, mustard, crushed garlic, chopped rosemary, salt, and pepper to create the marinade.
Submerge the chicken pieces in the marinade, ensuring all surfaces are evenly coated.
Cover the bowl and refrigerate for a minimum of 4 hours, or overnight for optimal results.
Preheat the cooking appliance to 385°F. Remove the chicken from the marinade and wipe off any excess.
Arrange the chicken in a single layer. Cook for 30-35 minutes, turning the pieces halfway through the cooking time until a crust forms and the chicken is cooked through.

"Note: The yogurt marinade prevents the skin from crisping. This recipe is particularly effective with boneless, skinless thighs for maximum tenderness."
