Ingredients
- 4.2 oz Cake Flour
- 3 oz Unsalted Butter, softened
- 4.6 oz Granulated Sugar
- 2.1 oz Buttermilk
- 1 Large Egg
- Juice and Zest of 1 Lemon
- 0.14 oz Baking Powder
- 1 pinch Salt
Instructions
With an electric mixer, cream the softened butter for at least 3 minutes. Gradually add the sugar and continue mixing until combined.
Incorporate the egg, lemon juice, and lemon zest.
Sift together the flour, baking powder, and salt. Add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.
Pour the batter into a small, buttered loaf pan, filling it three-quarters full.
Place the pan in the preheated appliance. Cook at 320°F for 30 minutes.
