Skip the freezer aisle. These homemade sticks use fresh white fish and a crisp breading for a wholesome, protein-rich meal that kids and adults will both enjoy.
Ingredients
- 14 oz thick white fish fillet (e.g., cod, plaice, hake)
- 1.4 oz all-purpose flour
- 1 tsp fish spice mix (e.g., dried parsley, lemon zest)
- 1 to 2 beaten eggs
- 4.2 oz fine breadcrumbs or Panko
- Cooking spray
- Salt and pepper
Instructions
Ensure fish is boneless. Pat thoroughly dry with paper towels. Cut into rectangular sticks approximately 1 inch thick.
In a shallow dish, combine flour, spice mix, salt, and pepper. In a second dish, beat the eggs. In a third dish, place the breadcrumbs.
Dredge each fish stick in the flour mixture, shaking off excess. Dip in the beaten egg, then coat completely with breadcrumbs, pressing to adhere.
Arrange the sticks in a single layer in the cooking basket. Spray the breading evenly with cooking spray.
Cook at 350°F for 8-10 minutes. Halfway through cooking, gently turn the sticks with a spatula to ensure even browning.
