The ultimate vegetarian skewer. Salty Cypriot halloumi cheese keeps its shape against the heat, developing a delicious grilled crust alongside vibrant, roasted vegetables.
Ingredients
- 7 oz Halloumi cheese, cut into large cubes
- 1 zucchini, cut into thick slices
- 10 cherry tomatoes, whole
- Half a red onion, cut into wedges
- 0.7 fl oz olive oil, oregano, and black pepper
Instructions
Combine cheese cubes, zucchini, cherry tomatoes, and onion in a bowl. Dress with olive oil, oregano, and black pepper. Omit salt due to the inherent salinity of halloumi.
Thread ingredients alternately onto long wooden skewers suitable for the cooking appliance.
Arrange skewers on the appliance rack, preheated to 375°F (190°C).
Cook for 12 minutes, rotating skewers midway through the cooking cycle using tongs.
Remove from the appliance upon observation of golden-brown charring on the cheese.
