A bright and morning-ready treat. These fluffy muffins balance the sharp tartness of fresh cranberries with the sweet, aromatic citrus notes of orange juice and zest.
Ingredients
- 4.2 oz all-purpose flour
- 2.5 oz granulated sugar
- 0.14 oz baking powder
- 0.07 oz baking soda
- 1 pinch salt
- 3.5 oz fresh or frozen cranberries
- 1 large egg
- 2.7 fl oz orange juice
- Zest of 1 orange
- 2 fl oz vegetable oil
Instructions
In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and cranberries.
In a separate bowl, whisk the egg with the orange juice, orange zest, and oil.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
Divide the batter among 8 prepared muffin cups.
Bake at 300°F for 15 minutes, or until a toothpick inserted into the center comes out clean.

"Fill muffin cups no more than 3/4 full to prevent overflow during baking."
