Crispy Coconut-Crusted Shrimp
A taste of the tropics. These shrimp feature a thick, crunchy coconut coating that delivers a sweet and savory finish without the need for deep-frying.
Ingredients
- 10.6 oz shrimp, cleaned and peeled
- 1.4 oz all-purpose flour
- 0.2 oz coarse salt
- 3 large eggs
- 0.7 fl oz milk
- 1.4 oz breadcrumbs
- 1.8 oz shredded coconut
- Cooking oil spray
- Seasonings, to taste
Instructions
In a shallow bowl, combine flour, salt, and desired seasonings.
In a second bowl, whisk together eggs and milk. In a third bowl, combine breadcrumbs and shredded coconut.
Dredge each shrimp in the flour mixture, dip in the egg wash, then coat thoroughly with the coconut-breadcrumb mixture, pressing to adhere.
Arrange the coated shrimp in a single layer in the preheated cooking basket. Lightly spray with cooking oil.
Cook at 350°F for 8 minutes, turning the shrimp over at the 4-minute mark.
