A savory centerpiece with a molten surprise. This meatloaf features a seasoned ground meat exterior that crisps beautifully, protecting a heart of melted cheese and savory ham.
Ingredients
- 1.1 lbs mixed ground meat (beef and pork)
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 3.5 oz sliced cooked ham
- 3.5 oz provola or scamorza cheese, sliced
- Extra virgin olive oil, for brushing
- Fresh rosemary sprigs
- Salt
- Freshly ground black pepper
Instructions
In a large bowl, combine the ground meat, egg, Parmesan cheese, breadcrumbs, salt, and pepper. Mix until a firm, uniform mixture is achieved.
On a sheet of parchment paper, press the meat mixture into a rectangle approximately 1/2-inch thick.
Layer the ham and cheese slices over the meat, leaving a 1-inch border on all sides.
Using the parchment paper as a guide, tightly roll the meat into a loaf. Pinch the seam and ends to seal completely.
Brush the exterior of the meatloaf with olive oil and place rosemary sprigs on top. Transfer to the air fryer basket, placing it on a perforated parchment sheet. Cook at 355°F for 35-40 minutes, or until cooked through.
