A crowd-pleasing fusion snack. Flaky puff pastry circles are topped with black beans, sweet corn, and melted cheese for a savory, Tex-Mex inspired appetizer.
Ingredients
- 2 pre-made soft puff pastry discs (approx. 6.7 inches diameter)
- Extra virgin olive oil for brushing
- 4.2 oz of zesty Mexican-style sauce (sweet and spicy)
- 6 oz of shredded Mexican cheese blend (e.g., Cheddar, Monterey Jack)
- 1.4 oz sweet corn kernels (thawed) and 2.1 oz black beans, mixed with a small handful (0.5 oz) of peas
Instructions
Preheat the cooking appliance to 320°F.
Lightly brush pastry discs with olive oil. Place discs into the cooking appliance basket.
Bake pastry bases for 5 minutes, or until lightly golden. Carefully remove.
Distribute Mexican sauce over the bases. Top with shredded cheese, black beans, corn, and peas.
Return to the cooking appliance. Cook for an additional 5 minutes, or until cheese is melted and bubbling.
